Self-Proclaimed Best Banana Bread

This is genuinely the most elite banana bread. It is perfectly moist while also keeping that bread texture. I love adding chocolate chips to mine, but any nuts would be delicious too! Adding a slices banana on top makes a caramelized texture on the top of the bread which is simply the best. A pro tip if your bananas are not ripe enough is to add them to the oven while it is preheating and they will get perfectly ripe!


Serves: 6-8


Ingredients: 3 ripe bananas, mashed ⅓ cup maple syrup ⅓ cup olive oil 1 tsp vanilla extract ⅓ cup milk or Greek yogurt (2% works well) 1 tsp baking soda 2 eggs at room temp 1 ¾ cup whole wheat or almond flour ½ tsp cinnamon ½ tsp salt Optional: Add chocolate chips like me and a sliced banana on top! Another yummy option would be walnuts, pecans, raisins, etc.


Method:

1.Preheat the oven to 325 degrees F and line a loaf pan with parchment paper or grease. PRO TIP: Add your bananas (with the peel on) to the oven while it preheats so that they get extra brown.

2.In a bowl, mix together the dry ingredients: flour, baking soda, cinnamon, salt

3.Beat the olive oil, vanilla, eggs, and maple syrup in another large bowl. Allow this to sit while you mash the bananas. Whisk in the milk/yogurt.

4.Combine your wet and dry ingredients and add chocolate chips if desired. Make sure not to overmix the batter!

5.Pour the batter into your loaf pan, and top with banana and more chocolate if desired.

6.Bake for about 55-60 minutes until the top is browned, and a toothpick comes out clean. Allow the bread to cool for 10-15 minutes before slicing.

7.Enjoy !! I love to top this with peanut butter or some regular butter and cinnamon.
