Easy Egg Bites

These quick and easy breakfast egg bites are perfect to prep for the week. I like to make these on Sunday and have them on hand all throughout the week! They are loaded with veggies, cheese, and a great source of protein from the eggs. They are my own spin on the classic Starbucks egg bites. By including parsley and spinach I made sure they had some healthy greens and flavor boosts. The recipe below serves about 7-9 Egg Bites.


Ingredients:

4 whole eggs

½ cup egg whites

¼ cup red onion, chopped

¼ cup tri color bell peppers, chopped

½ cup spinach, chopped

1-2 tbsp parsley, chopped

⅓ cup feta cheese

Salt and Pepper to taste

Method:

1.Spray a cupcake pan with olive or avocado oil and preheat the oven to 350 degrees. You can also use cupcake liners to ensure the egg bites do not stick to the pan!

2.Mix together all of the egg bite ingredients and then pour the mixture evenly into the cupcake tray

3.Bake for about 18-25 minutes or until the tops are slightly brown and the eggs are fully cooked

4.Remove from the oven and allow to cool for a few minutes before serving
