Pumpkin Spice Granola



I have not always loved the taste of pumpkin, but something changed this year and I cannot get enough! One of my favorite things to make myself is granola. It can be so hard to find grocery store granola without a lot of inflammatory oils, tons of added sugar, or just crazy ingredients. This granola is so simple and easy that I make a variation of it every week! You could easily add chocolate chips too, I wish I had! Also, if it is not fall or you are not a pumpkin person, this recipe can be adapted to be any flavor by swapping out spices or adding different dried fruits.


Ingredients:

  • 2 ½ tsp avocado oil

  • 1 cup oats

  • 2 tbsp seed mix: chia, flax hemp

  • ½ cup roughly chopped almonds

  • ½ cup roughly chopped walnuts

  • Few cracks of salt

  • 1 tbsp cinnamon

  • 1 tbsp pumpkin pie spice

  • 3 tbsp pumpkin puree

  • 1 teaspoon vanilla extract

  • 3 tbsp roasted pumpkin seeds

  • ½ cup honey or rice malt syrup

Method:

  1. Combine all of the dry ingredients and mix well

  2. Add in the pumpkin puree, vanilla, and honey

  3. Mix until combined

  4. Spread evenly onto a baking sheet lined with parchment paper

  5. Bake @350 for roughly 15 min, let completely cook before breaking into pieces
