Meal Prep Couscous Salad

One of the things that I have found most helpful when trying to stay healthy and keep my sanity throughout the week is meal prepping a big batch of a pasta salad. This couscous salad is a great addition to your rotation.

Ingredients
* 1 1/2 cups ancient grain mix from Trader Joes
* 2 persian cucumbers, diced
* 1 cup cherry tomatoes, diced
* 1/3 cup parsley, chopped
* 2 cups spinach, chopped
* 1/3 cup feta
* 2 Tbsp olive oil
* Salt and Pepper
* Method:
1. Cook the ancient grain mix according to package instructions. Add 1 tbsp Olive Oil at the end to prevent sticking.
2. Chop all of your veggies and add to a bowl.
3. Let the ancient grain mix cool, then add to the large bowl. Add 1 Tbsp olive oil and a heavy pinch of salt and pepper.
4. Store in the fridge for lunch throughout the week, and add your favorite protein!
