Homemade Frittata Bites

My mom introduced me to the Veggies Made Great egg frittatas a few years ago and they have been a staple in our house ever since. I really love them and recommend them to people all of the time, but I got to the point where I realized... I could easily make these... and probably better (in taste and in health!) So I did exactly that and these frittata bites are so easy to make and store in the freezer to have a healthy, home-made breakfast on hand. Let me know if you give them a try!


Ingredients:

  • 11 eggs

  • 1 cup spinach, chopped

  • 1/2 cup parsley, chopped

  • 1/2 cup chopped parmesan

  • 1/2 cup cottage cheese

  • 1 red bell pepper

  • ~8 oz roasted deli turkey

  • 1/2 red onion

Method:

  1. Preheat your oven to 300F and add a pan with ~ 1.5-2 in water to the oven

  2. In a pan over medium heat, add a drizzle of avocado oil

  3. Sauté you



    r red onion until soft.

  4. Add the red bell pepper and turkey and cook until the pepper is soft and the turkey is slightly brown (allow to cool for a few minutes)

  5. In a large bowl, add your 11 cracked eggs

  6. Whisk lightly

  7. Add in the turkey and pepper mixture, spinach, parsley, parm, cottage cheese, salt, and pepper to taste

  8. Mix everything until combined

  9. Spray a muffin tray with avocado oil and add about 1/2 scoop of the egg mixture to each

  10. Place the muffin tray in the water bath in the oven and allow to cook for 30 minutes

  11. Remove from the oven, allow to cool slightly and store in the fridge for 3 days or the freezer to last longer! Reheat in a microwave or air fryer
